Cloves are native to Southeast Asia and were an important commodity in the spice trade. Cloves are the dried bud of an evergreen tree. The Latin name for Cloves, Clavus, means ‘nail’ and this describes well what whole cloves look like. Cloves are a powerful tasting spice than can easily dominate the flavor of a dish if too much is used. Like allspice, it contains eugenol oil. It is popular in a variety of baked goods, pickling spices, mulling spices and Middle-Eastern meat dishes.
